Ingredients

Directions

Make the syrup

  1. In a saucepan, combine sugar, cream of tartar, and cold water.

  2. Boil until the mixture can form a thread when dripped from a spoon.

  3. Remove from heat and add the flavoring.

Beat and shape

  1. Set aside to cool slightly, then beat until light and creamy.

  2. When cool enough to handle, mold into desired shapes and place on a platter to harden.

Dip and vary

  1. Melt unsweetened chocolate in a double boiler.

  2. Dip the formed candies into the melted chocolate and set aside to cool.

  3. For variety, fill pitted dates with the cream or mix in chopped nuts before shaping.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the candy base and supplies sweetness and the structure that sets as it cools.
Cream of tartar
Acid that helps keep sugar crystals small, supporting a smooth, creamy texture.
Unsweetened chocolate
Forms a firm, bitter coating around the shaped candies.
Vanilla or other flavoring
Adds aroma and flavor to the cooked sugar mixture.

The step that matters

Boil to the thread stage. The sugar must reach the right concentration, shown by a thread forming from the spoon. Stopping early leaves candy too soft to hold its shape, and cooking too long makes it hard and grainy after beating.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (sugar, cream, vanilla, chocolate, almond, walnut):

  1. Pistachiofits better
  2. Hazelnutfits better
  3. Macadamia nutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, cream, vanilla, chocolate, almond, walnut. Candidates are from the same food group and used in at least 100 recipes.
