What each ingredient does

Veal
Forms the main body of the dish, becoming tender during long, slow simmering.
Fine bread crumbs
Coat the veal, adding a light browned crust when sautéed.
Carrot
Adds sweetness and body to the gravy as it simmers.
Onion
Adds savory depth and aroma to the gravy.
Hard-boiled egg yolk
Adds a rich, creamy garnish to the finished dish.

The step that matters

Simmer slowly for 3.5 hours or more. A gentle, low simmer lets the veal and vegetables release flavour and turn tender without toughening. Boiling hard can make meat stringy and cloud the gravy.
