Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Season the beef skirt with coarse sea salt, black pepper, and dredge with flour.

  2. Place the beef in an earthen dish and add enough water to partly cover it.

  3. Mix 1 teaspoon of butter with 1 teaspoon of flour and add to the water.

Cook

  1. Cook for 2 hours at 300°F (150°C).

What each ingredient does

Beef skirt
Is the main protein that becomes tender during the long, gentle cooking.
All-purpose flour
Coats the beef and thickens the cooking liquid slightly, adding body to the sauce.
