What each ingredient does

Potatoes
Form the bulk of the salad and absorb the vinegar dressing as they soak.
Vinegar
Adds acidity that sharpens flavor and seasons the warm potatoes.
Butter or oil
Adds fat and a richer mouthfeel to the dressing coating the potatoes.
Onion
Contributes sharp aroma and flavor that mellows as it sits in the dressing.

The step that matters

Dress the potatoes while they are warm. Warm potatoes are porous and absorb the boiling vinegar mixture far better than cold ones, so the flavor penetrates evenly. Letting them stand lets the starch surfaces keep soaking up the dressing.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (potato, pepper, onion, vinegar, butter):

  1. Garlicfits better
  2. Parsleythe original
  3. Thymefits about as well
  4. Tarragonfits less well

Fit is the average pairing score against potato, pepper, onion, vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
