Why it works: Parsley and carrot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓
Bean Soup
Ingredients
Directions
Prepare the beans
Soak the beans in 1 quart of warm soft water overnight.
Add 5 pints of cold or boiling water to the beans and bring to a boil.
Add the chopped onions, potato, and parsley or other flavoring.
Cook the soup
Wash the bacon several times with hot and cold water.
Boil the bacon in enough water to cover for 5 to 10 minutes.
Pour off the water and add the bacon to the bean soup.
Let the soup boil for about an hour until the meat is tender.
Remove the bacon and set it aside to cool.
Simmer the soup slowly for 3 hours or longer, then strain it.
Let the soup stand for a while.
Remove the fat.
Thicken and serve
Mix the fat with 2 to 3 tablespoons of flour in a clean saucepan over heat.
Gradually add the strained bean soup.
Bring to a boil for a few minutes.
Serve.
If a thinner soup is desired, use less fat and flour.
Optionally, add strained tomato juice and chopped parsley before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Beans
- Form the body of the soup and give it a thick, hearty texture as they soften.
- Bacon
- Adds smoky, salty fat and savory flavor to the broth as it cooks.
- Onions
- Add sweetness and aromatic depth as they soften in the soup.
- Potato
- Breaks down slightly during simmering to add body and starch to the soup.
- Flour
- Combined with the skimmed fat to form a roux that thickens the soup.
The step that matters
Mixing the fat with flour before adding the soup. Cooking the fat and flour together briefly forms a roux; adding liquid gradually while stirring prevents lumps and lets the soup thicken smoothly.
Swap the parsley
The recipe marks parsley as optional. How well each one fits the dish's main ingredients (beans, onion, potato, flour, tomato, bread, carrot):
- Cuminfits better
- Garlicfits about as well
- Celeryfits about as well
- Parsleythe original
Fit is the average pairing score against beans, onion, potato, flour, tomato, bread, carrot. Candidates are from the same food group and used in at least 100 recipes.
