Macaroni with Cream

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Break up the macaroni and place it in a saucepan.

  2. Add boiling water and a little coarse sea salt.

  3. Boil for 30 minutes, adding more water if necessary.

  4. Dissolve rice flour in a little cold water and thicken the macaroni.

  5. Cover and bake in a 350°F (175°C) oven for 30 minutes or longer.

  6. Heat the rich cream in another saucepan and mix it with the macaroni.

  7. Serve and flavor with pepper or finely chopped salted lean meat or parsley.
