Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef bone
Releases collagen and minerals into the water, giving the broth body and savory flavor.
Onion
Adds aromatic sweetness and depth to the broth as it simmers.
Potato
Adds starch that lightly thickens the broth and mellows its flavor.
Hot sterilized cream
Adds fat and richness, softening the broth's flavor and mouthfeel.
Egg yolk
Adds fat and emulsifying proteins that enrich the broth's texture.

The step that matters

Simmer slowly without a hard boil. A gentle simmer extracts collagen and flavor while keeping the broth clear. A rolling boil emulsifies fats into the liquid and makes it cloudy.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (beef, potato, cream, egg):

  1. Chivefits about as well
  2. Asparagusfits about as well
  3. Onionthe original
  4. Leekfits about as well

Fit is the average pairing score against beef, potato, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
