What each ingredient does

Camomile tea
Supplies the flavour and aroma compounds that dissolve into the hot water as it steeps.

The step that matters

Let it steep on a hot platter or over steam for 5 minutes.. Extraction depends on time and temperature. Keeping the tea hot lets flavour compounds keep dissolving for the full five minutes, so the infusion is consistent. Letting it cool slows extraction, which can leave the cup weak. Straining at the end stops further extraction and keeps the cup from becoming bitter.
