What each ingredient does

Tomato juice
Provides the main tomato flavor, acidity, and liquid base of the soup.
Cornstarch
Thickens the soup as it boils, giving it a smooth, body-rich texture.
Cream
Adds richness and fat, softening the acidity and giving a smooth mouthfeel.

The step that matters

Stir cornstarch into the boiling mixture. Cornstarch must be fully dissolved in cold water first, then added to a boiling liquid so its starch granules swell and thicken evenly. Adding it dry or to a cool liquid causes lumps or a thin soup.
