Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Japan or carolina rice
Its starch thickens the liquid as the grains break down during simmering.
Milk
Adds creaminess and body, and its milk sugars contribute mild sweetness and browning.
Cornstarch
Thickens the pudding further if it is not thick enough after simmering.
Egg yolks
Enrich the pudding and add richness and body when stirred in.

The step that matters

Boil rapidly until starch granules burst. Starch granules must swell and burst in boiling liquid to thicken the mixture. Boiling briefly at a high heat helps this happen before the heat is lowered to a gentle simmer, which keeps the milk from scorching while the rice softens.

Swap the vanilla

How well each one fits the dish's main ingredients (milk, rice, egg):

  1. Coconutfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Lemonfits less well

Fit is the average pairing score against milk, rice, egg. Candidates are from the same food group and used in at least 100 recipes.
