What each ingredient does

Almond meats
Supply the fat and solids that give the milk its body and creamy texture.
Hot water
Extracts flavor and soluble solids from the ground almonds into the liquid.

The step that matters

Pour hot water over the almonds and let stand for several hours or overnight.. The long soak gives the hot water time to draw flavor and solids out of the coarsely chopped almonds. A short soak leaves the milk thin and weak in flavor.
