What each ingredient does

Flour
Thickens the milk into a smooth, spoonable sauce as its starch swells when heated.
Milk
Forms the liquid base of the sauce, which the flour thickens.
Hard cooked eggs
Provide the shredded whites for body and the yolks for richness and color.
Bread
Provides a crisp, absorbent base that holds the warm sauce.
Butter
Adds fat and rich flavor to the toast and to the sauce.

The step that matters

Thicken the milk with flour. Flour must be cooked in the warm milk long enough for its starch to swell and thicken; if it is not stirred smooth and heated, lumps and a raw floury taste can remain.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (bread, butter, egg, milk, flour, lettuce):

  1. Figfits better
  2. Raisinfits better
  3. Vanillafits better
  4. Lemonthe original

Fit is the average pairing score against bread, butter, egg, milk, flour, lettuce. Candidates are from the same food group and used in at least 100 recipes.
