Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gum arabic
Acts as a stabilizer that helps the marshmallow hold its shape and stay smooth.
Granulated sugar
Provides sweetness and, with heat, helps build the body of the marshmallow.
Egg whites
Whipped to foam, they give the filling its light, airy structure.

The step that matters

Beating the mixture until stiff and white. Beating incorporates air into the syrup so the filling becomes light and foamy; under-beating leaves it dense and runny, while the heat must be applied gently to avoid cooking the egg whites into lumps.
