Orange Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Grate the yellow rind of the orange and lime, and squeeze the juice into a bowl, removing all seeds.

  2. Cream the butter and sugar together.

  3. Beat the eggs until light, then gradually stir them into the butter and sugar mixture.

  4. Add the mixed liquor and rose-water, followed by the orange and lime juice, stirring well.

Bake and serve

  1. Prepare a sheet of puff pastry using the flour and butter, and lay it in a buttered pie dish.

  2. Trim and notch the edges of the pastry, then pour in the mixture.

  3. Bake for about 30 minutes in a moderate oven at 350°F (175°C).

  4. Grate loaf sugar over the pudding before serving.

What each ingredient does

Eggs
Bind the mixture and set into a tender, custard-like texture when baked.
Butter
Adds richness and a tender crumb to the filling and the pastry.
Powdered white sugar
Sweetens the filling and helps cream with butter to create a light base.
Flour
Forms the puff pastry that holds the filling in the dish.
Orange
Provides the main citrus flavour and aroma from its rind and juice.

The step that matters

Beating the eggs and stirring them into the butter and sugar. Eggs added too quickly to creamed butter and sugar can curdle the batter. Gradual addition, with the eggs beaten until light, keeps the emulsion smooth and helps the pudding bake evenly.

Swap the lime

How well each one fits the dish's main ingredients (orange, sugar, butter, egg, wine, brandy, rose):

  1. Vanillafits better
  2. Lemonfits better
  3. Figfits better
  4. Limethe original

Fit is the average pairing score against orange, sugar, butter, egg, wine, brandy, rose. Candidates are from the same food group and used in at least 100 recipes.
