Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Smoked shark
Provides the main flesh and smoky flavor of the chowder.
Raw potatoes
Add body and starch that thicken the chowder as they cook.
Salt pork
Renders fat that carries flavor into the onions and broth.
Scalded milk
Makes the chowder rich and creamy in texture.
Butter
Adds fat for richness and a smooth, rounded mouthfeel.

The step that matters

Stir in the milk and bring to a boil. Milk can curdle or scorch if it is boiled hard or too long. Scalded milk is added warm and heated gently so the chowder stays smooth.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (shark, pork, potato, butter, milk, pepper):

  1. Capsicumabout as good a flavor fit
  2. Onionthe original

Fit is the average pairing score against shark, pork, potato, butter, milk, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
