Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fowl
Forms the outer shell that holds the stuffing and keeps its shape during cooking.
Pork
Adds fat and moisture to the stuffing, keeping the mixture tender when cooked.
Veal
Contributes a mild, tender meat body that binds with the pork in the stuffing.
Eggs
Hard-boiled yolks add richness and a crumbly texture to the stuffing.
Truffles
Provide a concentrated earthy aroma that perfumes the meat through the stuffing.

The step that matters

Place under light pressure until cold. Gentle pressure while the galantine cools compacts the stuffing so slices hold together neatly. Too much pressure squeezes out juices and makes the meat dense, while too little lets the filling loosen and crumble.
