Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk and soft body that holds the balls together.
Egg
Binds the mixture so the balls hold their shape while frying.
Salt fish
Supplies the main salty, savoury flavour of the balls.
Butter
Adds richness and moisture to the mashed mixture.

The step that matters

Boiling the potatoes until soft but not soggy. Waterlogged potatoes make a wet mixture that will not hold its shape and will absorb more fat during frying. Draining well and mashing until light keeps the balls firm and fluffy.
