Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

French Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the cream, milk, grated nutmeg, and chopped citron.

  5. Gradually add the flour, mixing until just combined.

  6. Fold in the raisins and pounded almonds.

Bake

  1. Pour the batter into a greased loaf pan.

  2. Bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar, it traps air and adds richness and a tender crumb.
Eggs
Provide structure and richness as they set in the oven, holding the cake together.
Flour
Forms the main structure of the cake once its proteins set during baking.
Sugar
Sweetens the cake and helps trap air when creamed with the butter for a lighter texture.
Raisins
Add pockets of sweetness and moisture throughout the crumb.
Pounded almonds
Add richness, fat and a nutty flavour that enriches the crumb.

The step that matters

Gradually add the flour, mixing until just combined. Once flour meets liquid, gluten begins to develop, so overmixing makes the cake tough and dense. Mixing only until combined keeps the crumb tender.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, flour, sugar, cream, raisin, milk, egg):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Capersfits less well
  4. Jalapenofits less well

Fit is the average pairing score against butter, flour, sugar, cream, raisin, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
