Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the pectin-rich pulp that forms the body of the ketchup.
Vinegar
Adds acidity that sharpens the flavour and helps preserve the ketchup.
Sugar
Adds sweetness that balances the vinegar and spices.
Onions
Add savoury depth and body as they soften in the pulp.

The step that matters

Boil the mixture for 1 hour. A full hour of boiling lets excess water evaporate so the ketchup thickens to a spreadable consistency. Stopping early leaves it thin and more likely to spoil in the jar.

Swap the onion

How well each one fits the dish's main ingredients (apple, vinegar, sugar, cinnamon, mustard, clove, pepper):

  1. Horseradishfits better
  2. Capsicumfits better
  3. Radishfits better
  4. Onionthe original

Fit is the average pairing score against apple, vinegar, sugar, cinnamon, mustard, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
