Why it works: Clove and nutmeg match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,686 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Turtle-soup
Ingredients
Directions
Prepare the turtle by cutting the meat suitable for baking and set it aside.
Place the bones, fins, entrails, heart, liver, and a piece of beef in a pot with a little coarse sea salt and cover with water to stew.
When the stew is about half done, season with black pepper, cayenne, mace, cloves, nutmeg, chopped parsley, and chopped onions.
Thicken the soup with drop dumplings made from a thick batter of cream, egg yolks, a little salt, and flour.
