Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Forms the crisp, firm body of the pickle that absorbs the vinegar.
Coarse sea salt
Draws water out of the cabbage, firming its texture before pickling.
White wine vinegar
Adds sharp acidity that preserves the cabbage and gives it its tang.
Whole cloves
Contribute warm aromatic flavour to the vinegar.

The step that matters

Salting and standing the cabbage. Salt draws water out of the cabbage through osmosis over the 24 hours, firming its texture. Draining it well before adding vinegar keeps the vinegar from being diluted and helps the pickle stay crisp.

Swap the cabbage

How well each one fits the dish's main ingredients (white wine, vinegar, clove, mace, allspice):
