Why it works: Pumpkin and wheat work together. They rank in the top 11% of all ingredient pairs, and cooks put them together in 134 recipes. Both carry 2-acetyl-1-pyrroline, which smells popcorn, roasted. The science ↓

Ingredients

Directions

Prepare the pumpkin

  1. Remove the rind from the pumpkin.

  2. Cut the pumpkin into slices.

  3. Boil the pumpkin slices until soft.

  4. Strain the boiled pumpkin slices.

  5. Mash the strained pumpkin finely.

Make the sponge

  1. Mix in ⅓ to ½ as much wheat flour as pumpkin.

  2. Set a sponge with yeast in the flour.

  3. Add the pumpkin to the sponge as it begins to rise.

  4. Use enough pumpkin to achieve proper dough stiffness without adding water.

  5. Ensure the pumpkin is not too hot to scald the yeast.

Bake

  1. Bake longer than regular wheat bread.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pumpkin
Adds moisture and body to the dough, so no extra water is needed.
Wheat flour
Forms gluten, the protein network that holds the gas and gives the loaf its structure.
Yeast
Ferments the sponge, producing gas that makes the dough rise.

The step that matters

Cooling the pumpkin before adding it to the sponge. Yeast is damaged by excessive heat, so pumpkin that is too hot can scald it and stop the fermentation that makes the bread rise. The pumpkin should be only warm when added.
