Salsify or Vegetable Oyster

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the salsify until the skin comes off easily.

  2. Remove the skin and cut the salsify into pieces the size of an oyster.

  3. In a deep vegetable dish, layer bread crumbs, a pinch of salt, pepper, nutmeg, and thin slices of butter.

  4. Add a layer of salsify, then more crumbs on top.

  5. Fill the dish with water and bake at 400°F (200°C) until browned, about 30 minutes to 2 hours.
