To Make Excellent Bread Without Yeast
Ingredients
Directions
Scald a double handful of Indian meal in a bowl.
Add a little salt and enough cold water to make it warmer than new milk.
Stir in wheat flour until the mixture is as thick as family pudding.
Set the mixture aside by the fire to rise for about half an hour.
If it draws thin, sprinkle a little fresh flour on top and turn the pot to prevent sticking.
After three to four hours, when it has risen and fermented, make it into a soft dough.
Flour a pan, place the dough in it, and cover it.
Set it before the fire, turning it around to warm evenly.
In about half an hour, it will be light enough to bake.
