Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the sugar and butter until light and fluffy.

  3. Add the flour, currants, raisins, brandy, nutmeg, mace, and citron to the mixture.

  4. Separate the eggs. Beat the yolks and mix them into the batter.

  5. Beat the egg whites until stiff peaks form. Gently fold the beaten whites into the batter.

Bake

  1. Pour the batter into a greased cake pan.

  2. Bake for about 1.5 hours.

What each ingredient does

Eggs
Yolks enrich the batter, while whipped whites add lift and a light crumb.
Butter
Creamed with sugar, it traps air and gives the cake a tender, rich texture.
Sugar
Creamed with butter, it helps create a light texture and adds sweetness and browning.
Flour
Provides the structure that holds the cake together as it bakes.
Currants
Add concentrated sweetness and chewy fruit pieces throughout the cake.

The step that matters

Folding in the beaten egg whites. Egg whites hold air only while whipped to stiff peaks. Folding gently keeps that air in the batter, so the cake rises well instead of turning dense.

Swap the mace

How well each one fits the dish's main ingredients (sugar, butter, flour, currant, raisin, brandy, nutmeg):
