What each ingredient does

White meat of a boiled or roasted chicken
Provides the protein that forms the body of the panada.
Stale bread
Absorbs liquid and thickens the mixture into a smooth paste.
Water from boiling chicken or beef tea
Supplies moisture and flavor, loosening the paste to a fluid consistency.

The step that matters

Boil for 10 minutes, stirring continuously.. Constant stirring keeps the starches in the bread and the proteins in the chicken from settling and scorching on the base of the pan, giving an even, smooth texture.
