Roast Lamb and Mint Sauce

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Stuff the hind quarter of lamb with fine bread crumbs, pepper, salt, and butter.

  2. Rub the outside with salt, pepper, butter, and flour.

  3. Roast in a 400°F (200°C) oven for two hours.

  4. For the mint sauce, chop the mint finely and pour on a little hot water.

  5. Let it stand on the stove for a short time, then add vinegar and sugar to taste.
