Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Dress the chickens and cut them in half.

  2. Soak in cold water for 30 minutes, then wipe dry.

Bake and season

  1. Place in a dripping pan, bone side down, without water.

  2. Bake in a hot oven at 400°F (200°C) for 30 minutes if the chickens are young.

  3. Remove from the oven and season with butter, pepper, and salt.

Make the giblet gravy

  1. Boil the giblets in a little water.

  2. After removing the chickens, add the giblet water to the pan, thicken, and stir in chopped giblets.

What each ingredient does

Chickens
Provide the main protein, which firms and turns opaque as it cooks.
Butter
Adds fat and richness, helping the skin brown and the meat stay moist.
