Preserved Strawberries

Ingredients

Directions

Make the syrup

  1. Layer the strawberries and sugar in a kettle.

  2. Place the kettle on the back of the stove until the sugar dissolves into syrup.

  3. Bring the mixture to a boil, stirring from the bottom.

Dry and store

  1. Spread the syrup on platters, not too thickly.

  2. Set the platters out in the hot sun until the syrup thickens, which may take 2 to 3 days.

  3. Store the preserved strawberries in tumblers like jelly.

What each ingredient does

Strawberries
Provide the fruit and flavor that the syrup preserves and carries.
Sugar
Dissolves into the juices to form a syrup and preserves the fruit by drawing out water.

The step that matters

Spread the syrup thinly on the platters. A thin layer exposes more surface to the sun, so it dries and thickens within the stated time. A thick layer stays wet and may not set properly.
