Ingredients

Directions

Prepare

  1. Heat the fat in a wide stew-pan until it gives off light smoke or hisses when a drop of cold water is added.

  2. Peel and slice the potatoes thinly, then pat them dry on a clean cloth.

Fry and serve

  1. Once the fat is hot, add the potatoes and stir with a skimmer to prevent sticking.

  2. Fry for 3-4 minutes until golden brown, then remove and drain on a cloth or colander.

  3. Sprinkle with coarse sea salt and serve plain or alongside steak.

What each ingredient does

Potatoes
Form the crisp golden crust and soft interior when fried in hot fat.
Lard, beef fat, or mutton fat
Conducts heat evenly and fries the potatoes, adding richness and flavour.

The step that matters

Dry the potato slices before frying. Surface water turns to steam when it meets hot fat, causing spattering and soggy potatoes instead of a crisp, evenly browned surface.
