Simmer and strain

  1. Bring to a boil, then reduce heat and skim the surface.

  2. Add the brown gravy or browning and let simmer until the ox-tails are very tender.

  3. Remove the ox-tails and place them in a tureen.

  4. Strain the soup through a fine sieve over the ox-tails.

  5. Add the boiled and chopped celery and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox-tails
Release collagen and flavour into the broth, becoming very tender during long simmering.
Onions
Build sweetness and deep savoury flavour as they brown in the base.
Flour
Thickens the soup slightly and helps the brown glaze form.
Carrot
Adds sweetness and aromatic depth to the broth.
Celery
Adds savoury, aromatic flavour to the broth and a second portion for texture at the end.

The step that matters

Browning the base until a thick brown glaze forms. Caramelising the vegetables and meat proteins on the pot bottom builds the deep, roasted flavour of the soup. Stir occasionally so the glaze browns evenly without burning and turning bitter.

Swap the onion
