Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White wine
Reduced to provide acidity and a concentrated flavour base for the sauce.
Veal gravy
Adds body and savoury depth as the reduced liquid thickens into the sauce.
Butter
Enriches the sauce, giving it a glossy texture and rounder mouthfeel when melted in.
Shallots
Contribute a mild, sweet onion aroma that infuses the reducing liquid.

The step that matters

Reducing the wine almost entirely. If the wine is not reduced far enough, its sharp acidity and alcohol remain in the sauce. Reducing concentrates the flavour and cooks off the harshness, giving a fuller base for the gravy.
