What each ingredient does

Butter
Provides the rich fat base, and as it darkens its milk solids toast for a nutty flavour.
Vinegar
Adds acidity that sharpens and balances the rich, buttery sauce.

The step that matters

Darkening the butter without burning it. As butter heats, its milk solids brown and give a nutty flavour. If they go past golden into black, they turn bitter and acrid, so the pan needs close attention and medium heat.

Swap the parsley

How well each one fits the dish's main ingredients (butter, vinegar):

  1. Tarragonfits better
  2. Garlicfits about as well
  3. Parsleythe original
  4. Capersfits about as well

Fit is the average pairing score against butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
