What each ingredient does

Fresh salmon
Forms the main body of the dish and becomes tender as it stews gently.
Clear stock
Provides the liquid that cooks the fish and forms the base of the sauce.
Carrots
Add sweetness and body to the stewing liquid, which is reduced into the sauce.
Onions
Add savoury depth and aroma to the stewing liquid and the resulting sauce.

The step that matters

Simmer gently for about 2 hours. Gentle heat keeps the salmon tender and moist, while a hard boil would toughen and break up the flesh. Keeping the liquid below a rolling boil protects the texture of the fish.
