Why it works: Capers and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,550 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Cold Salmon
Ingredients
Directions
Cook the salmon whole or in large pieces in salted water and cool it in the same water.
Remove the skin from one side of the cooled salmon.
Coat the exposed fillets with mousse de saumon, adding more in the middle than on the sides.
Cover the mousse with mayonnaise sauce thickened with fish jelly and let it set.
On the serving dish, place some clear fish jelly to set, then place the salmon on top.
Surround the salmon with a border of Montpellier butter using a piping bag.
Decorate the center with truffles and encircle it with royale crowns made from anchovy fillets.
