Baked Turkey

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Slice the sausages and place them in a frying pan with the plums, pears, and chestnuts. Fry in a little butter for about 2 minutes.

  2. Mix the cooked ingredients with the chopped turkey liver and Marsala or sherry to make forcemeat. Stuff the turkey with this mixture.

  3. Place the turkey in a baking dish with bacon slices, rosemary, and salt. Bake at 300°F (150°C), basting occasionally.

  4. Line a dish with puff pastry and bake just until it colors.

  5. Layer the duck slices and sausage meat in the dish. Cover with the pastry, brush with egg white, and bake for 1.5 hours.
