Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Peel the mushrooms and rinse them to remove any grit.

  2. Cut off the ends of the stalks.

Bake

  1. Place the mushrooms on a greased baking sheet with the stalk side up.

  2. Add small bits of butter on each mushroom and season with pepper and coarse sea salt.

  3. Cover with buttered paper and bake in a 350°F (175°C) oven for 10 to 20 minutes until tender.

Serve

  1. Serve on buttered toast with gravy poured over them.

What each ingredient does

Mushrooms
Form the main body of the dish, becoming tender and juicy as they bake.
Butter
Adds richness and moisture, melting over the mushrooms to carry flavor and help them brown lightly.

The step that matters

Covering with buttered paper while baking. The cover traps steam so the mushrooms cook through and turn tender while staying moist. Uncovered, the surface can dry out before the centre softens.
