Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb the gravy to form a thick paste that gives the mould its body.
Egg yolks
Bind the mixture so it holds together when turned out and sliced.
Egg whites
Whisked to a stiff froth, they lighten the mould and help it set with a delicate texture.
Finely minced beef
Provides the main meaty structure and savoury flavour of the mould.
Cooked liver
Adds rich, deep flavour and a smooth, dense texture when rubbed through a sieve.

The step that matters

Whisking the egg whites to stiff froth. Egg whites must be whisked to a stiff, stable foam and folded in gently so the air is kept. Overmixing deflates the foam, leaving a denser mould that does not lighten as intended.
