What each ingredient does

Ox tongue
Is the main protein, becoming tender as it is sliced, steeped and slowly cooked.
Lemon juice
Acidifies the meat during steeping, adding a sharp, bright flavour.
Button mushrooms
Release moisture and savoury flavour as they cook in the butter.
Sherry
Adds aromatic depth and a touch of acidity to the cooking liquid.
Tomato sauce
Adds colour, sweetness and tangy savoury body to the finished sauce.

The step that matters

Cook slowly without burning. Gentle heat lets the tongue soften and the juices concentrate into a sauce. Higher heat or too little liquid can scorch the sugars and proteins on the pan, leaving bitter flavour and dry meat.
