Devilled Eggs

Oven, in the book's wordsA fierce oven

Ingredients

Directions

The book says “a fierce oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cook the eggs in an omelette pan, turning them carefully like pancakes.

  2. Slide the eggs gently into a dish and sprinkle with brown butter and a few drops of vinegar.

  3. Garnish the bottom of the dish with spinach leaves stewed in butter and sprinkle with grated cheese.

  4. Break the eggs onto the spinach garnish and cover with Mornay sauce.

  5. Place in a hot oven at 400°F (200°C) to cook and glaze the eggs simultaneously.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
