Pastry Sandwiches

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Knead the pastry trimmings lightly into a smooth round ball.

  2. Roll out the dough very thinly, keeping it as square as possible.

  3. Spread jam evenly over one half of the dough.

  4. Fold the other half over, wet the edges, and press them lightly together.

  5. Brush the top with water and dredge well with castor sugar.

  6. Use the back of a knife blade to mark the paste across in lines about one inch apart.

  7. Bake for about 20 minutes in a moderate oven at 350°F (175°C).

  8. When cold, cut the pastry into strips.
