What each ingredient does

Beetroots
Provide the bulk, colour and earthy sweetness of the fritter mixture.
Egg yolks
Bind the mixture and enrich it, helping it set when gently heated.
Flour
Thickens the beetroot purée so it holds its shape when dropped.
Lemon rind
Adds bright aroma that balances the sweetness of the beetroot.

The step that matters

Stir the mixture over low heat for 10 minutes. Gentle heat cooks the flour and egg yolks so the mixture thickens without scrambling or sticking. Too much heat can curdle the yolks and scorch the base, while too little leaves the flour raw and the mixture too loose to shape.
