What each ingredient does

Raspberries
Provide the fruit, pectin and flavour that form the jam's body and taste.
Sugar
Sweetens the jam and, with cooking, helps it thicken and keep.

The step that matters

Adding the sugar gradually. Adding the heated sugar slowly, as the mixture heats, helps it dissolve evenly and avoids scorching or grainy texture at the bottom of the pan.
