Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Starch that absorbs the stock and gives the cakes their body when cooked.
Egg yolks
Bind the mixture so the cakes hold their shape.
Egg white
Gives the breadcrumb coating a surface that sticks and crisps when fried.
Cheese
Adds savoury flavour and fat to the cake mixture.
Tomato sauce
Adds moisture, acidity and colour to the mixture.

The step that matters

Boil the rice until it absorbs as much liquid as possible. Rice that is well absorbed and cooled firms up enough to hold its shape. Undercooked or wet rice makes the cakes slump and break apart in the pan.

Swap the parsley

How well each one fits the dish's main ingredients (rice, cheese, bread, tomato, sauce, pepper, egg):

  1. Parsleythe original
  2. Capersfits about as well
  3. Celeryfits about as well
  4. Thymefits about as well

Fit is the average pairing score against rice, cheese, bread, tomato, sauce, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
