Vanilla and sugar barely smell alike, yet cooks put them together in 35,032 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vanilla pods
Provide the main vanilla flavour and aroma that infuses the sugar.
Lump sugar
Grinds with the pods to a fine powder and carries the vanilla flavour.
Icing sugar
Dilutes the vanilla powder and gives a fine, evenly flavoured sweetener.

The step that matters

Drying the vanilla pods completely. Pods that still hold moisture resist grinding and can spoil or mould during storage. Fully dry pods pound into a fine powder that keeps its flavour.
