Breast of Lamb with Tomato Sauce

Oven, in the book's wordsA very hot oven

Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil the breast of lamb until tender, then remove the bones.

  2. The day before serving, prepare the lamb and place it in a bag.

  3. Half an hour before serving, egg and crumb the lamb, season, and put it in a well-greased bag.

  4. Seal the bag and place it in a 400°F (200°C) oven for 20 minutes.

  5. Serve with tomato sauce.
