Panned on Cream Toast

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mushrooms

  1. Cut the stems of the mushrooms close to the gills.

  2. Wash and dry the mushrooms.

  3. Place them in a pan with gill sides up and pour melted butter over them.

  4. Dust with salt and pepper.

Bake and toast

  1. Bake in a 400°F (200°C) oven for 20 minutes.

  2. Toast the bread until golden brown.

  3. Pour hot milk over the toasted bread, being careful not to soak it too much.

Assemble and serve

  1. Place the mushrooms on the toast with the skin side up and pour the pan juices over them.

  2. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Main ingredient that softens and releases juices that flavour the pan sauce and toast.
Butter
Adds fat and richness, carrying flavour as the mushrooms bake.
Bread
Provides a crisp, toasted base that holds the creamy mushrooms.
Milk
Adds moisture and a creamy texture to the toast.

The step that matters

Pouring the milk over the toast. Bread soaks up liquid quickly, so too much milk makes the toast soggy and collapses its structure. Pour gently so the toast stays crisp underneath the mushrooms.
