Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mushrooms

  1. Cut the stems of the mushrooms close to the gills.

  2. Wash and dry the mushrooms.

  3. Place them in a pan with gill sides up and drizzle with melted butter.

  4. Dust with salt and pepper.

Bake and assemble

  1. Bake in a 400°F (200°C) oven for 20 minutes.

  2. Toast the bread until golden brown.

  3. Pour hot milk over the toasted bread, being careful not to soak it.

  4. Place the mushrooms on the toast with skin side up and pour the pan juices over them.

  5. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main body and earthy flavor of the topping as they cook in butter.
Melted butter
Adds fat and richness, helping the mushrooms brown and carry flavor.
Bread
Forms the crisp, absorbent base that holds the creamed topping.
Hot milk
Adds moisture and creaminess when poured over the toast.

The step that matters

Pouring the hot milk over the toast. Toast is porous and soaks up liquid quickly. Pouring gently and only as much milk as the bread can hold keeps the base crisp rather than soggy.
