Ingredients

Directions

The book says “a moderately quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Cook the macaroni

  1. Break the macaroni into convenient lengths and place it in a two-quart kettle.

  2. Fill the kettle nearly with boiling water, add 1 teaspoon of salt, and boil rapidly for 25 minutes.

  3. Drain the macaroni in a colander, then rinse it in cold water for 10 minutes and drain again.

Assemble and bake

  1. In a baking dish, layer macaroni, cheese, salt, and pepper, repeating until all ingredients are used, finishing with macaroni on top.

  2. Cut the butter into small pieces and distribute them evenly over the top, then add the milk or cream.

  3. Bake in a 400°F (200°C) oven for about 20 minutes, or until golden brown.

  4. Serve in the dish in which it was baked.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Macaroni
Forms the bulk and structure of the dish, holding its shape when baked.
Cheese
Melts into the sauce and browns on top, adding richness and flavor.
Milk or cream
Adds moisture so the dish stays creamy rather than dry during baking.
Butter
Adds fat that enriches the flavor and helps the top brown.

The step that matters

Rinsing the macaroni after boiling. Cold rinsing stops the cooking so the pasta does not turn soft and mushy, which keeps its texture firm through baking.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
