What each ingredient does

Eggs
Whipped whites add lift and airy structure, while the yolks enrich the crumb and add richness.
Butter
Creamed with sugar, it traps air and gives the cake a tender, rich texture.
Flour
Provides the structure that holds the cake together as it sets in the oven.
Baking powder
Releases gas in the heated batter, helping the cake rise and become light.
Sweet almonds
Add nutty flavor and moisture, and a dense, tender body to the crumb.
Powdered sugar
Sweetens the batter and, creamed with butter, helps form a fine, even crumb.

The step that matters

Folding in the whipped egg whites with the flour. Whites hold air only until they are deflated. Adding flour alternately and mixing gently keeps the batter light, so the cake rises well instead of turning heavy.
